Developed by the Georgia Manufacturing Extension Partnership (GaMEP) at Georgia Tech, this course equips participants with the knowledge and tools to build a compliant HACCP plan tailored to juice processing operations.

Learn the full scope of the FDA’s Juice HACCP regulation (21 CFR Part 120), including its historical development, legal mandates, and compliance timelines for juice processors of all sizes.
2. Build a HACCP Team and Conduct Preliminary Steps
Discover how to assemble a HACCP team, define product scope and distribution, and develop flow diagrams and sanitation procedures tailored to juice manufacturing operations.
3. Identify Juice-Specific Hazards and Risk Factors
Master the identification of biological, chemical, and physical hazards in juice production—such as pathogens, allergens, and contaminants—and learn how to assess their severity and likelihood.
4. Establish Critical Control Points and Limits
