Current Good Manufacturing Practices

Good Manufacturing Practices (GMP) provide a foundation for any food safety system. GMP in food industry is a series of rules required to produce safe foods. These include hygiene, product handling guidelines, sanitation procedures, and operational conditions. The Food and Drug Administration's (FDA's) Food Safety Modernization Act (FSMA) recently elevated traditional GMPs, now called "current GMPs" or "cGMPs". The cGMPs ensure that ingredients, products, and packaging materials are handled safely, and that food products are processed in a suitable environment.

Note: The course contains knowledge checks and a score of 70% or higher must be earned on each knowledge check to successfully pass the course.

What You Will Learn in this GMP in Food Industry Training Course

During this self-paced GMP in Food Industry Training course, you will learn about:

  • Current cGMPs needed for FSMA's Preventive Controls rule for food.
  • Risks from people and the environment in food production.
  • current cGMPs required for FSMA's Preventive Controls rule for food.
  • Documentation, internal audits, employee training, and implementing a strong system.


This course consists of the following five modules:

Module 1:  Introduction to GMPs and USDA GMP Rules

During the introduction to GMPs module, you will learn why it's important to have Good manufacturing Practices and what can go wrong if you don't have GMPs at your facility. You will also hear about the GMPs for different food categories, such as seafood, meat and poultry, eggs, and more.

Module 2:  Food Hazards and the Best Way to Avoid Cross Contamination

During the food hazard module, you will hear about the four types of hazards:  biological, chemical, physical, and radio logical. You will also learn about cross contamination and the best ways to avoid cross contamination in your food manufacturing plant.

Module 3:  FDA FSMA cGMPs

In this module, you will learn about the different cGMPs around sanitation, personnel and hygiene, your facility and the surrounding areas, and more.

Module 4:  Food Safety Audit

During a food safety audit, the auditor will look at your documents, processes, records, and the facility. In this module, we'll teach you how to conduct a current good manufacturing practices internal audit, how to identify issues, and follow-up to make sure problems were fixed.

Module 5:  Food Recall Preventative Measures

In this final module, we will teach you the cornerstones of food safety training, how to create an internal auditing program to verify compliance to cGMPs, and how to train others. You will learn about training logs, how to keep training simple, and engage and empower employees to ensure a successful food safety implementation plan.
